I am not a naturally talented cook, and time is not on my side.

Kindergarten just started for my oldest.  I can’t believe I am actually a mom of a child in the public school system!  With that came a new routine for the family.  Two stops before home to pick up the kids after work, a night of gymnastics, homework, and an additional lunchbox to pack.


Also with the kids back at school and summer officially “over” it seems like my regular job has also kicked into high gear, so naturally the first thing to go was cooking new meals.  I fell back to relying on the quick and easy recipes.  Don’t get me wrong, there is nothing wrong with quick, easy, and reliable meals.. it just gets boring!

Last year when I was obsessed with 21 day fix, it forced me to try new recipes and I loved it.  I had to plan out my meals, buy food, and try to cook something new, different, and nutritious.  Now, I know realistically I can’t do that every night, but I want to try and make a few new recipes a week to keep it fun.

Last year I bought myself the cookbook Thug Kitchen and made a few recipes from the book.   This weekend I pulled it out again, peruse through it and picked out 2 recipes to try for the week.  The first is a chickpea and broccoli burrito, the second is a beet and quinoa salad.  Plus this book is funny as F*, and no I am not a vegan.


Tonight I made the chickpea and broccoli burrito.  By the time I got home it was 6:15pm, I had dinner at 7:30.  The kids had chicken nuggets.   Time was needed to chop an onion, pepper, and broccoli crown.  I used canned chickpeas.  The rest was adding spices and roasting in the oven for 35 minutes.    I put it on one of the Tumaro’s whole wheat wraps and added some spinach.  I was planning on adding avocado but it wasn’t ripe enough.  wah wah.   Verdict:  DELICIOUS!  Totally loved it, and after putting the recipe into the myfitness pal recipe creator the entire meal was only 300 calories and a perfect blend of protein, carbs, and fat.  I have enough left for 2 lunches this week too, because let’s face it I am the only one in this house who will eat it (I cut this recipe in half).  Maybe my son will try it, he’s my adventurous eater.   You can find the whole recipe here and transcribed below.  Next time I’ll add more lime… who doesn’t love lime?  Happy eating!

ROASTED CHICKPEA & BROCCOLI BURRITO

3 cups of cooked chickpeas (2-15 ounce cans, drained)
1 large yellow onion
1 red bell pepper
1 large crown of broccoli
4 cloves of garlic (I used goya minced garlic)
1 lime (I used lime juice)
Spice Blend:
3 tablespoons olive oil
1-2 tablespoons soy sauce, tamari, or Bragg’s Liquid Aminos (You can usually find this old school hippie shit near the vinegars or soy sauces in the healthy eating section of most big grocery stores and on the internet)
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika

1/2 teaspoon ground coriander or more cumin if you don’t want to go to the storeblack pepper or cayenne pepper to taste

Heat the oven to 425 degrees. Chop up the onion, bell pepper, and broccoli so that all the pieces about the size of a chickpea. Chop up the garlic real small but save that shit until later. Place all the chopped up veggies in a large bowl with the cooked chickpeas. Pour in the oil and soy sauce, stir, and then throw all the spices in there. Mix until all the vegetables and shit are covered.

Put all of that on a large rimmed baking sheet (like what you would put cookies on but with an edge) and bake for 20 minutes. Take it out of the oven, don’t fucking burn yourself, add the garlic, and bake for another 15 minutes. The broccoli will look a little burnt at this point but that is the plan so chill the fuck out and take it out of the oven. Squeeze the juice of half of the lime over the pan and stir the roasted chickpeas and veggies all around. Taste some and see if it needs more spices or anything. Now make a fucking burrito. I like mine with spinach, avocado, cilantro, and some fire roasted salsa but you do your thing

Happy New Month!

Happy Monday everyone.  Today not only ushers in a new week, but a new month.  There is something magical about new beginnings.  A chance to start over, a time to make goals.  January 1st everyone is so set about what the new year will bring them.  I am not that excited about new years, I prefer to look at new weeks!  Making small, manageable goals ladders up to something phenomenal in one year.  Think about it.  If you made a point to make a small change every Monday- imagine what 52 Mondays of change look like!
Last week I was so happy I hit every one of my workout goals.  Sometimes it isn’t always possible and I see there are obstacles already popping up this week.  Preparation is key to success.
Back to goal setting for the week and month ahead.  Sit down with yourself and come up with 4 things you want to focus on this month.  Then actually write them down!  Pick one a week to really focus on, then the next week try to do 2, then 3, then 4.   For example, they may be things like:
– Drink 1/2 my weight in water every day (this one is my downfall)
– Log my food this week
– Bring my lunch instead of buying it
– Eat breakfast every day
– Eat fruits and vegetables every day
-Try a new recipe/new food this week
– Exercise 2,3,5,7 x this week (you choose!)
– Incorporate strength training into my week (especially if you favor cardio)
– Incorporate cardio into my week (especially if you favor lifting)
– Incorporate stretching into my week
– Give a compliment to a stranger every day this week
– Do something nice to someone without being asked (or thanked or expecting something in return)

Motivation Monday- Finding your why

I’m pretty sure I wrote this before, but it bears repeating.  The VERY first thing I ask anyone interested in starting any health journey is “why.”  Why do you want to lose weight?   Sure, looking great in your clothes and fitting into those jean from high school is nice, but that won’t keep you on track.  Cupcakes and alcohol are way too good.

Most people know my story (and if you don’t you can check it out in about me section), but my why is making sure I am taking care of me so that I can have more energy and patience for my family.   I have 2 toddlers, I also work full time as a scientist.  I know that when I indulge too much and don’t exercise I am just a nasty person and my family gets the brunt of it.  I feel tired, bloated, sluggish and screaming toddlers make me lose my sh*t.

What also keeps me motivated is having other people help keep me accountable or incentives.  This week I have a private facebook group going.  We are all going to post every day something we are doing to stay healthy, whether that be a workout or a healthy meal.  At the end of the week I am raffling off a prize to a randomly selected winner.  The only rule to be entered into the raffle is to post something in our group daily.  If you need some extra accountability and want to meet some like minded people,  I would be happy to add you too 🙂

today is the day

I urge you this week to sit down with yourself, grab a piece of paper, a journal, a napkin, anything and be honest with yourself.  Why do you need to stay on track this week?  Maybe there is a history of cardiovascular disease or diabetes in your family and you need to lose weight to stay healthy, maybe you need some extra patience for your kids, maybe you have a stressful week coming up and a few good sweat sessions will help make you feel better.  Endorphins are a powerful thing.

All before 8 am

Some days fly by.

Last year I attended a TED talk given my by company.  The CEO, Alex Gorsky, really is a phenomenal man.  He practices what he preaches and I felt (and still feel) so proud to be a part of his company.  He is super active, runs marathons and always participates in the yearly company sponsored triathlon.  He also needs to travel the world for business on a regular basis.

Something he said really rang true to me.  He said “I have no control over what the day throws at me, but I can control how early I wake up.”

Although I’m not a CEO, I feel the same way about being a working mom & wife.   Since I’ve started waking up earlier, I feel like I’ve added so much “free” time to my day.

Although it’s not glamorous.  Proof below.

Today we needed to get the kids up, dressed, and fed so I could be out the door by 7:30.

My run started around 5:45am, it was so beautiful out this morning!
I ran a nice 3.5ish mile loop around my neighborhood.  It was bright, it was the perfect themperature, the sun was shining through the trees, hardly any cars out… I ran into several deer though.  Those pesky buggers weren’t even scared!


I rocked out to some Britney Spears Pandora…


When I got home there was someone who had just woken up and was waiting for me by the door

Before I could even stop sweating, we had work to do.  It was breakfast time!


Luckily, we made it out on time.  Kids fed and dressed, lunch packed for mom, shake in hand.    These kids don’t know how good they have it!  Breakfast was all set when Jimmy came downstairs.


Coffee and in my meeting by 8.  It’s lunch now… Is the day over yet?

It wasn’t fast, but it felt good.

A little 9pm cleaning

Do you ever look at your house and just think “ugh,  I really need to clean.  Do I really have to?”  I got that feeling today, and the answer was yes.  I had to clean.

First up, I live in an old home, with hard water.  We have a water softener, but we still get buildup everywhere!  These pumice stones are amazing!  $0.99 at Walmart and they get rid of all the water rings.  No bleach or anything necessary.


Next, floors.  Having toddlers means food everywhere!  No matter how much I clean we find little ants.  So we finally got them to listen to the new rule, no food in the living room.  Only in the dining room.  They “forget” sometimes but we are getting there.

So far under the couch I found an empty bag of pirates booty, a few headbands, legos, balls, coins, random other toys and tons of popcorn kernels.  We’ll see how long things stay clean.  For now they are nice and shiny clean!


There is still a little laundry to do… And two more baskets in the basement.  Maybe I’ll tackle some before work tomorrow.


As for today’s workout, Hammer max strength.  One minute of each exercise then 8 reps at max weight.  Then a little 10 minute abs!
