Rainbow Quinoa

Rainbow Quinoa
-1 cup of cooked quinoa
-1/2 red pepper, diced
-1/2 orange pepper, diced
-1/2 yellow pepper, diced
-1 cup of diced carrots
-1 cup of purple cabbage chopped
-3 tbsp of fresh lime juice
-1 tbsp of maple syrup
-1/2 tsp of cumin
-pinch of cayenne
-sea salt to taste

Mix cooled cooked quinoa, bell peppers, carrots and red cabbage in a large bowl. In a small bowl whisk lime juice, maple syrup, cumin, cayenne and salt. Pour dressing over salad and mix together! Enjoy cool!
